Guess who made some super simple and incredibly delicious coffee popsicles for you? I did. These treats are dangerously addictive, and one probably won’t be enough. Thankfully, this recipe yields eight beautiful popsicles—plenty for you and maybe someone special if you feel like sharing.
These boozy caramel coffee popsicles are an ideal summer dessert for adults. They take less than five minutes to whisk together before pouring into an ice pop mold. The recipe uses coffee liqueur and caramel-sweetened condensed milk (dulce de leche) to deepen the flavor, and the base is International Delight Iced Coffee. I used the Caramel Macchiato flavor here, but mocha or vanilla would work nicely as well.
Photographing popsicles in a hot sunroom is a challenge—they melt fast and you often end up inhaling the remains before they puddle. If you have a fridge with an ice dispenser, laying the popsicles on a bed of ice helps; otherwise a little puddle gives the photos character.
If you plan to remove popsicles from the freezer to eat them, a good strategy is to pop them from the mold, place them in a freezer-safe bag, and return them to the freezer. That frees up the mold so you can make another batch if the craving hits.

Ingredients
- 2 1/4 cups International Delight Iced Coffee
- 1/2 cup caramel sweetened condensed milk, (dulce de leche)
- 2 T. coffee liqueur
Instructions

In a large bowl or a 4-cup measuring cup with a spout, combine the iced coffee, caramel sweetened condensed milk (dulce de leche), and coffee liqueur.

Whisk until the mixture is smooth and well combined.

Pour the mixture into your ice pop mold.

Cover with the mold lid. Run water over wooden popsicle sticks and insert them into the mold—this helps the sticks stay firmly in place.

Freeze overnight or until completely firm.

To unmold, run warm water over the bottom of the popsicle mold for about 30 seconds, then remove the popsicles.

Store the popsicles in a freezer bag or freezer-safe container until ready to serve.
