Directions
- In a skillet over medium heat, cook the ground turkey with the chopped celery and onion until the turkey is no longer pink, about 5 to 7 minutes. Add the chili powder, black pepper, cumin and crushed red pepper (if using). Cook and stir for 2 minutes, then stir in the tomato sauce, chili beans and drained cannellini beans. Simmer until heated through, about 5 minutes. Remove from heat and set aside.
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a bowl, combine the two packages of cornbread mix with the milk and eggs, stirring until smooth. Spoon the cornbread batter into the prepared pan, spreading evenly. Spoon the turkey-and-bean chili mixture over the batter.
- Bake uncovered for about 20 minutes, until the cornbread edges are golden and the center is mostly set. Remove from the oven, sprinkle the shredded Cheddar evenly over the top, and return to the oven for 5 to 10 minutes more, until the cheese is melted and the center is set.
