Fresh corn salsa made with just seven simple ingredients—ready in minutes and bursting with bright, crunchy flavor.

If you love Chipotle’s corn salsa, you’ll appreciate how easy it is to recreate at home. Fresh corn adds a crisp, sweet bite that lifts any bowl or chip-and-dip spread.
This recipe takes only a few minutes and uses seven ingredients you likely already have on hand.

How to make corn salsa
Start by removing the kernels from four ears of corn—this yields about 3 cups of fresh corn kernels.
In a mixing bowl combine the corn with finely diced red onion and diced green bell pepper. Squeeze in the juice of two small limes, add two tablespoons chopped fresh cilantro, then season with one teaspoon salt and 1/2 teaspoon black pepper.
This version is intentionally mild to be kid-friendly. If you prefer heat, swap part of the bell pepper for diced fresh jalapeño to add a spicy kick.

Gently stir everything together until evenly combined. The salsa is best served right away while the corn is crisp and the lime is fresh.
Enjoy with tortilla chips, or spoon it over a homemade burrito bowl for a refreshing, crunchy topping.
Tomorrow’s post features an easy vegan burrito bowl that pairs perfectly with this corn salsa and a simple homemade guacamole.
Honestly, I could eat this by the bowlful—the bright lime and salt really make the fresh corn sing.

I can’t get enough!
