Dark Chocolate Pancakes with Fresh Raspberry Sauce

Last year I made red velvet pancakes for Valentine’s breakfast, but this year I’m leaning into something a bit richer: dark chocolate. There’s something inherently romantic about deep chocolate flavor paired with bright raspberries, and these pancakes deliver both indulgence and balance.

We usually save a big breakfast for our Thursday “breakfast for dinner” tradition, so mornings tend to be simpler. Still, every now and then a special breakfast is worth the extra effort. These dark chocolate pancakes are perfect for a leisurely morning—luxurious, chocolaty, and finished with a fresh raspberry sauce that cuts the richness with bright, tart notes.

Dark Chocolate Pancakes

These are easily the best pancakes I’ve made so far. If you love dark chocolate, you’ll appreciate how the cocoa and semi-sweet chips add depth without becoming cloying. The pancakes are moist and tender, with pockets of melted chocolate, and the raspberry sauce brings a fresh, fruity finish that makes each bite sing.

Below you’ll find the recipe, ingredient lists, and step-by-step instructions so you can recreate these pancakes at home. I also include a few simple tips to help you get the best texture and flavor.

Rich, tender dark chocolate pancakes served with a simple fresh raspberry sauce. The cocoa flavor is deep but balanced by buttermilk and a touch of vanilla, while the raspberries add bright acidity and natural sweetness. Ideal for a special breakfast or weekend brunch.

Ingredients

For the raspberry sauce:

  • 1/2 cup sugar
  • 1/2 cup water
  • 2/3 cup fresh raspberries

For the dark chocolate pancakes:

  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened dark cocoa powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 tablespoons sugar
  • Pinch of salt
  • 1/2 cup low-fat buttermilk
  • 1 large egg, beaten
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet or dark chocolate chips

Instructions

  1. Make the raspberry sauce: combine the water, sugar, and raspberries in a small saucepan. Heat over medium until the mixture comes to a gentle boil, then simmer for about 5 minutes, stirring occasionally. Remove from heat and let cool slightly, about 3 minutes. Transfer to a blender or food processor and puree until smooth. If you prefer a seedless sauce, strain the puree through a fine mesh sieve and discard the seeds.
  2. Prepare the pancake batter: whisk together the flour, cocoa powder, baking soda, baking powder, sugar, and salt in a bowl. Make a well in the center and add the buttermilk, beaten egg, vegetable oil, and vanilla. Stir gently until just combined—the batter should be slightly lumpy. Fold in the chocolate chips.
  3. Cook the pancakes: heat a griddle or nonstick skillet over medium-low to medium heat and add a small pat of butter. Scoop about 1/4 cup batter per pancake (a large cookie scoop works well) onto the griddle. Cook until bubbles form on the surface and the edges look set, then flip and cook an additional 2–3 minutes, until cooked through and slightly springy. Repeat with remaining batter, adding more butter as needed.
  4. Serve: stack pancakes and drizzle with the raspberry sauce. Top with fresh berries for color and texture. These pancakes are also delicious with a drizzle of maple syrup or a light cream cheese icing if you prefer.

Dark Chocolate Pancakes

If you want to vary the recipe, try these simple swaps: use whole milk or full-fat buttermilk for a richer pancake; stir in toasted nuts for crunch; or replace half the chocolate chips with chopped dark chocolate for pockets of molten chocolate. For the raspberry sauce, a splash of lemon juice brightens the flavor, and a touch of vanilla or a teaspoon of liqueur can deepen the aroma.

These pancakes are a lovely choice for Valentine’s Day, a weekend brunch, or any morning when you want something special. The combination of deep chocolate and tart raspberry is classic and satisfying—decadent enough to feel like a treat, yet balanced and fresh thanks to the homemade sauce.
