I have a serious sweet tooth, and some days I want something sweet after every meal. Lately I’ve been trying to eat a proper meal before reaching for dessert. These bites are surprisingly satisfying—one is enough for me. They’re flavorful without being overwhelming: the slight tartness of the apricots balances the coconut and a touch of salt and honey.
I store these in the refrigerator; they soften and practically melt in your mouth. If you prefer not to use honey, any liquid sweetener works—just note honey can crystalize when chilled, while some alternatives won’t.

Coconut Apricot Bites
Ingredients
- 1/2 cup dried apricots
- 1 cup shredded unsweetened coconut
- pinch sea salt
- 1 teaspoon vanilla
- 1 tablespoon coconut oil
- 1-2 tablespoons raw honey or other liquid sweetener
Instructions

Pulse half the coconut in a food processor until it becomes a fine powder, then remove it to a bowl.

Process the apricots until they are chopped into very small pieces.

Return the powdered coconut to the processor with the chopped apricots, the remaining coconut, salt, vanilla, coconut oil, and honey. Blend until the mixture forms a cohesive “dough.” Scoop and roll into balls, or press into a pan and refrigerate until firm, then slice like fudge. If the mixture feels warm and soft, chill briefly before rolling so the coconut oil firms up.
