Crispy Air Fryer Shrimp Fajitas with Peppers and Onions

When I made this recipe for Air Fryer Shrimp Fajitas the other night, I ended up apologizing to my air fryer for ever doubting it.

I’ll admit my first impression of an air fryer was way off — and I’m not ashamed to say I was wrong.

How to make Air Fryer Shrimp Fajitas

Start with one pound of jumbo shrimp, peeled and deveined.

Pat the shrimp dry with paper towels and place them in a large bowl.

Thinly slice one red bell pepper, one yellow bell pepper, and one red onion, then add the slices to the bowl with the shrimp.

Thin slices are important because the shrimp only needs about eight minutes in the air fryer.

For ease, I used a 1-ounce fajita seasoning packet. Add it to the bowl with the shrimp and vegetables.

Add about 1 tablespoon olive oil and 2 cloves minced garlic. For extra color and flavor, stir in 1 teaspoon paprika and 1 teaspoon chili powder.

Toss everything together until the shrimp and veggies are evenly coated — now it’s ready for the air fryer.

Depending on the size of your air fryer, you may need to cook in two batches. I used a fairly large model and still did two batches.

Place half the mixture in a single layer in the air fryer basket. Set the temperature to 400°F and cook for 8 minutes.

While the first batch cooks, warm some soft fajita-sized tortillas and prepare your favorite toppings: salsa, sour cream, shredded cheese, and shredded lettuce are great choices.

After eight minutes the shrimp and vegetables should be perfectly cooked. Remove the first batch, then repeat with the remaining mixture.

If you have leftovers, they make a delicious shrimp fajita salad—just pile the cooked shrimp and peppers over greens and add your preferred dressing.

Ingredients

Instructions

  1. Pat the shrimp dry and place in a large bowl.
  2. Thinly slice the peppers and onion and add them to the bowl with the shrimp.
  3. Add olive oil, garlic, fajita seasoning, paprika, and chili powder. Toss to coat evenly.
  4. Place half the mixture in a single layer in the air fryer. Cook at 400°F for 8 minutes.
  5. Remove the cooked batch and repeat with the remaining mixture.
  6. Serve with warm tortillas and your favorite toppings.
