Baked BBQ Chicken

After many requests from subscribers, I finally put together this baked BBQ chicken thighs recipe. It’s the same method I used when Nana asked me to make her a comforting dinner — she couldn’t believe how flavorful it turned out the first time she tried it.

The combination of onions, green peppers and a few herbs gives this dish a distinctive, homey flavor. I learned a lot from my great-grandmother Alice Mae in the kitchen, and using familiar seasonings and touches from family cooking made this one especially memorable. Nana can be a tough critic, so her praise meant a lot.

Cooking utensils you’ll need:

  • Casserole dish: A baking or casserole dish large enough for the chicken thighs.
  • Measuring cups: For accurately measuring the BBQ sauce and liquids.
  • Measuring spoons: For the seasonings to ensure balanced flavor.

Ingredients you’ll need:

  • Meat: Chicken thighs (bone-in, skin-on recommended)
  • Vegetables: Onions and green bell peppers (optional but recommended)
  • Liquids: Chicken broth and optional liquid smoke
  • Fat: Butter
  • Seasonings: Salt, garlic powder, onion powder, Italian seasoning, thyme, black pepper
  • Condiment: Honey BBQ sauce

The seasonings

I rely on a blend of dried seasonings so each bite is well-rounded. Italian seasoning and thyme are especially important here — they add a savory herbal depth that elevates basic barbecue flavors and sets this baked version apart.

Cooking time and temperature

Tender, juicy thighs come from cooking at the right temperature for the right time. I bake mine at 350°F. Cooking too long at high heat can dry chicken, so moderate heat and time matter.

I typically bake these thighs for around 2 hours at 350°F. Covering with foil is optional; it can make the meat extra tender but thighs are naturally forgiving and stay moist even uncovered.

Vegetable add-ins

Onions and green peppers are optional but add a pleasant sweetness and texture. I started adding them when I had small leftovers from another dish and discovered they boost the overall flavor. Use green bell peppers and yellow onions, chopped coarsely, and add them sparingly so they complement rather than overpower the chicken.

BBQ Sauce

Choose a thick, flavorful BBQ sauce—honey or sweet-and-spicy styles work particularly well. If you only have original BBQ sauce, mix in about 1/4 cup honey to add sweetness and help the sauce caramelize.

When to add the BBQ sauce

I prefer to add the BBQ sauce toward the end of baking. If you bake the sauce for the full time it can darken or taste overly caramelized. Brush or pour the sauce on in the last 20–30 minutes so it thickens and clings to the chicken without burning. This also allows you to finish the thighs briefly under the broiler for extra color if desired.

How to clean chicken

Brief cleaning and trimming improve the final result. Start by removing excess fat and any loose skin, then rinse or soak briefly using a mild cleaning solution if you prefer.

Removing excess skin and fat

  • Lift the skin and trim away any large deposits of yellow fat with a sharp knife.
  • Remove any clear slime beneath the skin and trim any dangling or excessive skin. Keep some fat to help keep the thighs moist.

Cleaning solutions

  • Salt water: Soak 20–30 minutes, rub gently, then rinse well. Don’t soak too long to avoid brining the meat.
  • Vinegar water: A mild vinegar rinse is commonly used for cleaning and can help remove odors.
  • Lemon or lime water: Popular in some regions; it can freshen and slightly brighten the color of older-looking chicken.

Serving suggestions:

  • Soul-style green beans, collard greens, or sweet buttery corn make classic vegetable sides for BBQ chicken.
  • Southern potato salad or deli-style macaroni salad are excellent cold sides; a zesty pasta salad also pairs nicely for a lighter option.

Storage and reheating

  • Store: Place cooled chicken in an airtight container and refrigerate. It will keep well for several days.
  • Freeze: Seal in freezer bags or airtight containers to prevent freezer burn; label with date.
  • Reheat: Reheat gently in the oven to preserve texture, or use the microwave for quick reheating. If frozen, thaw overnight in the fridge before reheating.

Frequently Asked Questions

  • How long does the chicken last? Properly stored in the refrigerator, cooked chicken is best within 3 days though it can last up to 5–7 days. For best quality, eat sooner rather than later.
  • How to double the recipe? Double all ingredients and use a larger baking dish or two dishes. Cook time remains similar; ensure pieces aren’t overcrowded so they bake evenly.

Give this baked BBQ chicken a try and see how your family likes it. The combination of herbs, peppers, onions, and a honey BBQ finish makes it a reliable favorite. Enjoy!
