No-Bake Peanut Butter Cookies: Quick No-Oven Treats

“Peanut butter is like crack for women.” I read that line in a book recently and, though I tried to argue with it, I couldn’t—at least not for me. A spoonful of peanut butter is irresistible, and when it’s folded into a no-bake cookie, it becomes downright addictive.

There’s something deeply satisfying about the texture and flavor of peanut butter. Beyond the taste, it’s a versatile ingredient: it adds creaminess, richness, and a nutty depth to both sweet and savory recipes.

In this recipe peanut butter takes center stage. These no-bake cookies are everything you want: smooth, fudgy, and unbelievably simple to make.

They’re not a health-food version—these are an indulgent treat. If you need a dairy-free option, substitute coconut oil for the butter and use your preferred non-dairy milk; I used coconut milk and couldn’t detect any coconut flavor in the finished cookie.

After I posted a photo of a second batch on Instagram, my little brother emailed begging for the recipe—so perhaps that “peanut butter is like crack” idea isn’t exclusive to women. 😉

Peanut Butter No-Bake Cookies

These peanut butter no-bake cookies are fast to make and rich in flavor—perfect when you need a fuss-free, delicious treat.

Ingredients

  • 4 Tablespoons butter (or coconut oil for dairy-free)
  • 2/3 cup milk (use non-dairy milk if desired)
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 1 cup peanut butter
  • 3 cups quick-cooking oatmeal (gluten-free if needed)

Instructions

  1. Add the butter, milk, and sugar to a saucepan.
  2. Heat over medium, stirring until the butter melts and the sugar dissolves.
  3. Bring the mixture to a boil and let it boil for two minutes.
  4. Remove the pan from the heat.
  5. Stir in the vanilla and peanut butter until smooth.
  6. Quickly add the oatmeal and mix until evenly combined.
  7. Drop spoonfuls onto parchment paper–lined cookie sheets. (Parchment helps, but the cookies will also come off a bare pan with a little twist.)
  8. Allow the cookies to cool and set.
  9. Enjoy!
