For years friends and colleagues raved about In-N-Out Burger. Despite extensive travel across the United States, I hadn’t spent much time on the West Coast until recently. My first In-N-Out experience came in Carson City, Nevada. The second time was on a drive back to San Diego when a coworker announced we were stopping for In-N-Out and, on his phone, pulled up the official In-N-Out locator app. Seeing that app in use felt like confirmation that this chain inspires an unusually devoted following. When we arrived the restaurant was packed and the drive-through wrapped around the corner at 8 p.m. — another sign that this place draws something special.

A few weeks later I flew into San Diego for work with two priorities in mind: eating at In-N-Out and trying Tsuruya Sushi. I finally had another chance to taste In-N-Out for myself.

What makes In-N-Out so special?

First, you quickly notice that In-N-Out isn’t on every street corner like some larger competitors; there are fewer than 300 locations nationwide. Second, regardless of the hour, the restaurants are consistently busy. Third, they’re remarkably clean and staffed by friendly, courteous employees. The menu is deliberately simple: burgers, cheeseburgers, double cheeseburgers, fries, milkshakes and soft drinks. I ordered the Double-Double with fries. Each order is prepared fresh, and the fries are hand-cut and cooked to fulfill current orders.

As I ate, I thought about why the Double-Double stands out compared with other fast-food options. The best way to describe it is that the experience evokes the early days of fast food in the 1950s, when quality, service and value mattered equally. The beef is flavorful, and the lettuce, tomatoes and onions — offered as extras — are generous and taste fresh. There’s no limp, wilted lettuce here. The bun is fresh, and the signature spread, a Thousand Island-style dressing, complements the other ingredients perfectly. While I’ve occasionally found the fries undercooked at some locations, this visit served fries fried to perfection.

After that meal it became clear why In-N-Out has such loyal fans. The combination of fresh ingredients, simple menu, consistent service and clean restaurants sets it apart from typical fast-food chains. Many websites and reviews analyze the chain in depth, but for me, one memorable meal was enough to become a devoted fan.
