Zucchini and Spinach Frittata Recipe: Quick Savory Breakfast

A frittata with zucchini and spinach. Deliciously baked in the pan and then flavored with herbs, Parma ham, and cheese. An easy recipe for lunch or dinner that is ready within 20 minutes.

For the food blog swap of December I chose a recipe from Peggyspastime and discovered this lovely zucchini and spinach frittata. It’s simple, elegant and refreshingly light after a stretch of holiday meals. Serve it warm for lunch or slice into triangles as an elegant New Year’s Eve appetizer.

Step-by-Step Directions

Ingredients

  • 250 grams spinach
  • 1 clove garlic, sliced finely
  • 1 shallot, sliced finely
  • ½ zucchini, cut into 1 x 1 cm cubes
  • 3 eggs, size L
  • 100 ml cream
  • 75 grams Parmesan cheese, grated
  • 1 teaspoon honey mustard
  • 70 grams Parma ham

All recipes show Metric and US Customary units. Choose which you prefer.

Instructions

  • Preheat the oven to 180 °C / 350 °F.
  • Wash the spinach and stir-fry it briefly (about 3 minutes) until wilted.
  • Drain the spinach well and chop it finely.
  • In a frying pan, sauté the shallot and garlic for about 1 minute.
  • Add the zucchini cubes and cook for 2 minutes, then stir in the chopped spinach.
  • In a bowl, whisk the eggs with the cream, chopped Parma ham and grated Parmesan.
  • Stir in 1 teaspoon of honey mustard and season with salt and pepper to taste.
  • Combine the vegetables with the egg mixture in the pan (or transfer to an ovenproof dish) and bake in the oven for 10 minutes, until the frittata is set and lightly golden.
