
Today is my due date and our little boy’s one-month birthday. It’s a strange mix of emotions — I hate that he’s already a month old, and I’m deeply grateful that he’s here. I’m exhausted and starving. Nursing makes me feel like I could eat everything in sight. After nine months of struggling to keep weight on during pregnancy, I now crave food constantly. Since it’s an emotional day, let’s pretend we’re friends sharing a grilled peanut butter, Nutella, and banana sandwich — or, fine, make your own. This isn’t a complex recipe, but it’s a next-level grilled sandwich that deserves its place in your rotation.

Our little boy came after a long, five-year journey. We prayed, explored adoption, met with doctors, and waited on answers. After much prayer and fasting, we felt we should try for another pregnancy. That decision wasn’t made lightly — I had difficult prior pregnancies with HG and both Cade and I worried about what another pregnancy would bring. With an excellent medical team and a lot of faith, we moved forward.

The waiting and trying were emotionally draining. Every month was a reminder of what hadn’t happened yet. I was afraid of not conceiving and afraid of conceiving then suffering through severe illness again. Still, before we knew, I kept feeling that this baby would be a boy. It was a strong, persistent sense, like someone missing from our family was finally coming home.

Five years of hope, prayer, and patience makes this feel even more miraculous. I know many never have the chance to bring children into their lives, and that thought hurts. But having waited and hoped, and then done everything we could to bring him here, has given this experience profound meaning for me. We knew there were risks — I’m considered high risk — and some questioned why we would try again. For us, faith and a feeling that there should be another child were stronger than fear. Faith is a daily choice, and for us it led to this blessing.

We truly witnessed a miracle and the loving hand of our Heavenly Father in bringing him to us. I still can’t believe he’s here.

Ingredients
- 2 slices good-quality bread (I used Dave’s Killer Good Seed Bread)
- Creamy peanut butter
- Nutella spread
- 1/2 banana, sliced
- Unsalted butter, softened
Instructions
- Heat a skillet over medium heat.
- Spread peanut butter on one slice of bread and Nutella on the other.
- Add banana slices, then close the sandwich.
- Butter one side of the sandwich and place it butter-side down in the skillet.
- Spread butter on the top side while the sandwich cooks.
- Cook until the bottom is lightly golden, then flip and cook the other side until golden.
- Remove from the heat, let cool briefly so you don’t burn your mouth, and enjoy.
