Fudgy Red Wine Brownies

With a busy recipe-testing schedule, I needed something that would actually excite my family — and mentioning fudgy red wine brownies did the trick. These brownies combine the familiar comfort of dense chocolate with the subtle complexity that red wine brings. The wine lifts the chocolate flavor without overpowering it, creating a dessert that tastes indulgent and refined at the same time.

I developed this recipe for the holiday season, where chocolate-rich treats are always welcome. Whether you’re baking for a small dinner party or assembling a platter of sweets to share with friends and neighbors, these brownies are an easy way to introduce an adult twist to a classic favorite.

Why Add Red Wine to Desserts?

Alcohol, like salt, can amplify flavor. When used thoughtfully, wine brings fruit and spice notes that complement chocolate exceptionally well. In this recipe, a full-bodied red such as Cabernet Sauvignon pairs nicely with semi-sweet chocolate, adding depth and a subtle roasted-fruit character. Most of the alcohol bakes off, leaving the nuanced flavor behind — so the brownies retain a grown-up dimension without tasting boozy.

These brownies proved popular with even picky chocolate lovers at my house. The wine suggestion is simply that — a way to layer extra flavor. If you prefer, you can experiment with other red wines that suit your palate; look for something dry and balanced so the chocolate remains the star.

For holiday gifting, these brownies are easily dressed up. A glossy chocolate glaze, a sprinkle of festive sugar, or a few small decorative cookies transform simple squares into attractive parcels. They slice best when chilled, which also makes them easier to package and share.

The addition of red wine gives these brownies an extra depth of flavor and a glossy finish when topped with a simple chocolate glaze.

Ingredients

  • 4 ounces semisweet chocolate, chopped
  • 1/2 cup butter, cut into pieces
  • 1/4 cup red wine (try a dry Cabernet Sauvignon)
  • 2 eggs
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

For the glaze:

  • 2 ounces semi-sweet chocolate, chopped
  • 1 tablespoon butter
  • 2 tablespoons cream

Instructions

  1. Preheat the oven to 350ºF. Line an 8×8-inch pan with non-stick foil or regular foil sprayed with non-stick cooking spray. Set aside.
  2. Melt the chopped chocolate and butter together in a heatproof bowl in the microwave, stirring every 30 seconds until the mixture is smooth and fully melted.
  3. In a large bowl, whisk the eggs with both sugars and the vanilla until combined. Stir in the melted chocolate mixture, then whisk in the red wine until smooth.
  4. Add the flour, cocoa powder, and salt, and whisk until the batter is uniform. Fold in the chocolate chips.
  5. Pour the batter into the prepared pan and bake 15–20 minutes, or until a tester inserted in the center comes out with a few moist crumbs but not wet batter. Avoid overbaking to keep the brownies fudgy.
  6. While the brownies bake, prepare the glaze: melt the chocolate and butter together until smooth, then whisk in the cream until glossy. Pour the warm glaze over hot brownies and spread evenly with a knife or offset spatula.
  7. Cool the brownies completely. Chill briefly to make slicing cleaner if desired, then lift out with the foil and cut into squares to serve.

Notes

These brownies slice most cleanly when cold. Bring them to room temperature before serving for the best texture. Total time does not include any additional chilling time.
