I finally tried adding tortellini and tomatoes to a traditional Caesar and it’s surprisingly delicious. The combination turns a simple salad into a satisfying, pasta-forward meal without much fuss.
This is essentially a hybrid pasta salad–salad that elevates the usual romaine-and-dressing combo into something heartier and more filling.
Frozen cheese tortellini works perfectly and is convenient, but refrigerated fresh tortellini from the grocery store is excellent as well.
If you’d like to switch things up, try spinach tortellini or other flavored varieties like chicken-and-herb or spicy sausage tortellini for a different twist.

Ingredients
- 9 oz cheese tortellini , frozen or refrigerated
- 4-6 cups chopped romaine lettuce
- 1 tomato , chopped or diced
- fresh parmesan cheese for topping , optional
- 1/2-1 cup Caesar dressing , homemade or store-bought
HOMEMADE CROUTONS
- 2 cups diced bread (stale French baguette or ciabatta recommended) approx. 2-3 oz
- 1 TBSP olive oil
- salt and pepper to taste

Make the croutons first: preheat the oven to 375°F. Toss cubed bread with olive oil, salt, and pepper until evenly coated, spread on a parchment-lined baking sheet, and bake 12–16 minutes or until golden and crisp. Time will vary depending on the bread.

While the croutons bake, bring a pot of water to a boil and cook the tortellini according to package directions—about 3 minutes for fresh and 4–5 minutes for frozen. Drain and rinse under cold water to stop cooking, then set aside.

In a large bowl, combine chopped romaine, cooked tortellini, diced tomato, and optional parmesan. Just before serving, drizzle with Caesar dressing and toss to coat. Top with croutons and serve immediately.
