- ½ tsp salt & pepper, each
- ½ tsp paprika
- ½ tsp onion powder
- 1 Tbsp olive oil
Toppings (optional)
- 8 corn tortillas
- 4 Tbsp cotija cheese, crumbled
- 1 jalapeño, thinly sliced
- 1 lime, sliced for garnish

Toast the panko, if using: toast in a dry skillet for about 4 minutes until golden, then set aside.

Make the coleslaw. Blend or whisk mayonnaise (or yogurt), sriracha or chipotle, water to thin, and salt and pepper. Mix in cilantro and toss most of the dressing with the coleslaw. Refrigerate and reserve extra dressing to drizzle on the tacos.
