I’ve been saving this recipe for a while, and it’s finally time to share my absolute favorite cookie bar. If you enjoy dense, chewy cookie bars, you’ll love these: a reliable cookie dough base, plenty of chocolate chips, and a creamy chocolate fudge stripe through the middle.
The cookie dough is based on a dependable recipe that yields a rich, soft, and ooey-gooey texture perfect for bars. The chocolate fudge is a simple three-ingredient version—melted chocolate chips combined with sweetened condensed milk and vanilla—making it fast to prepare and foolproof every time.

These bars are baked in a 9″x13″ pan for a generous batch, but you can halve the recipe for a 9″x9″ pan or even bake it in a pie dish to create a cookie-style pie. No matter the shape, the result is the same: a crisp exterior, soft interior, and molten fudge center that sets beautifully once chilled.

Ingredients
Cookie Bars
- ¾ Cup and 2 Tbsp. Butter, Partially Melted (200g)
- ¾ Cup Brown Sugar (140g)
- ½ Cup Sugar (100g)
- 2 teaspoon Vanilla Extract
- 2 Large Eggs
- 2 and ⅔ Cups All Purpose Flour (320g)
- 1 teaspoon Baking Powder
- ⅛ teaspoon Salt
- 1 Cup Chocolate Chips (180g)
Chocolate Fudge
- 1 Tin Condensed Milk (397g)
- 1 teaspoon Vanilla Extract
- 2 and ¼ Cups Chocolate Chips (405g)
Instructions
Chocolate Fudge
- Melt the chocolate chips and stir them into the condensed milk with the vanilla extract until smooth. Set aside while you prepare the cookie dough.
Cookie Bars
- Preheat the oven to 180°C (350°F) and grease a 9″x13″ baking pan with butter or nonstick spray.
- Beat the butter, brown sugar, and sugar together until combined.
- Add the eggs and vanilla extract and beat until smooth.
- Stir in the flour, baking powder, and salt until incorporated, then fold in the chocolate chips.
- Press half of the cookie dough evenly into the bottom of the prepared pan.
- Spread the prepared chocolate fudge over the cookie layer.
- Drop the remaining cookie dough in small blobs over the fudge to cover the filling as best as you can.
- Bake for 20–30 minutes. The edges and top will be golden and set while the center may still wobble slightly.
- Chill in the refrigerator until completely set for neat squares, or enjoy warm and spoonable straight from the oven.
