Hearty Loaded Breakfast Casserole with Sausage and Cheese

I call this Loaded Breakfast Casserole because it’s packed with classic morning favorites: hash browns, bacon, sausage, ham, eggs and cheese. It’s ideal for Christmas morning, holiday brunches, or any time you’re feeding a crowd. The casserole serves about 12–15 people, can be assembled the night before, and freezes well for meal prep.

The recipe is very adaptable. Add your favorite vegetables, swap or omit meats as needed, or use tater tots instead of hash brown patties if that’s what you have on hand.

Begin by greasing an 11×13 (9×13 also works) baking dish and arranging 10 frozen hash brown patties in the bottom. I like to put them in the oven at 400°F while I finish the prep so they crisp up slightly, but you can skip that step if you prefer.

Once the hash browns are in place, layer 1 lb of cooked, crumbled breakfast sausage over them. Drain any excess grease before adding it to the dish.

Next, add about 8 oz of chopped deli ham. Precut cubed ham from the store works well if you want to save time.

Top the ham with 1 lb of cooked, crumbled bacon. I bake bacon on a sheet at 400°F for about 20 minutes—it comes out evenly cooked and easy to crumble.

In a large bowl, whisk together 12 eggs and 1 cup of milk. Season to taste—garlic powder, onion powder, black pepper, and a pinch of salt work well. The meats contribute salt, so keep the salt modest.

Pour the egg mixture evenly over the layered meats and hash browns. Cover the dish tightly with foil and bake at 400°F for 30 minutes.

After 30 minutes, remove the foil and sprinkle 1/2 cup shredded mozzarella and 1½ cups shredded sharp cheddar (or your preferred cheeses) over the top.

Return the casserole to the oven and bake uncovered for another 15–20 minutes, until the cheese is melted and bubbly and the eggs are set.

Serve warm alongside biscuits, toast and fresh fruit for a complete breakfast spread.

Ingredients

  • 10 Frozen Hash Brown Patties
  • 1 lb Breakfast Sausage, cooked, crumbled and drained
  • 8 oz Deli Ham, chopped prepackaged cubed ham will also work
  • 1 lb Bacon, cooked and crumbled
  • 12 Eggs
  • 1 Cup Milk
  • 1/2 Cup Shredded Mozzarella Cheese
  • 1.5 Cups Shredded Sharp Cheddar Cheese

Seasonings

  • 1 tbs Garlic Powder
  • 1 tbs Onion Powder
  • 1 tbs Black Pepper
  • 1 tbs Slap Ya Mama optional
  • 1/2 tsp Salt

Instructions

  • Preheat oven to 400°F (204°C).
  • Grease a 9×13 or 11×13 baking dish and arrange the hash brown patties across the bottom. Optionally bake them briefly while you finish prepping.
  • Layer cooked sausage, chopped ham and crumbled bacon over the hash browns.
  • Whisk the eggs, milk and seasonings together, then pour the mixture evenly over the casserole.
  • Cover tightly with foil and bake for 30 minutes.
  • Remove the foil, sprinkle with cheeses, and bake uncovered for another 15–20 minutes until set and golden.
  • Let cool slightly, slice, and serve hot.

Notes

Assemble the casserole the night before, cover and refrigerate, then bake the next morning for an easy holiday breakfast.

To freeze: bake first, cool completely, wrap tightly in plastic and foil. Thaw in the refrigerator 1–2 days before reheating in the oven until warmed through.

Customize with vegetables, different meats or cheeses to suit your family’s tastes.

Tater tots make a great substitute for the hash brown patties if you prefer.
