I won’t be handing out candy tonight because I’ll be back in the motherland — South Jersey — celebrating my dad’s birthday. Ingredients

  • 1 2/3 cups all purpose flour
  • 1/2 cup brown sugar, lightly packed
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon kosher salt, divided, plus more to taste
  • 2 large eggs
  • 6 tablespoons melted unsalted butter
  • 2/3 cup milk
  • 1 tablespoon vanilla extract
  • 2/3 cup granulated sugar
  • 5 tablespoons unsalted butter (for the caramel)
  • 3 Granny Smith apples, peeled, cored, and sliced into thin half moons
  • Vanilla ice cream, for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, and half of the salt. Add the eggs, melted butter, milk, and vanilla extract. Stir until the batter is smooth and no large lumps remain. Set aside.
  3. In an oven-safe heavy-bottomed pot or cast iron skillet over low heat, combine the granulated sugar, the remaining salt, and 3 tablespoons of water. Stir until the sugar dissolves, then let the mixture simmer without stirring until it turns a deep amber color. Be careful not to burn it. Remove from heat briefly and stir in 5 tablespoons of unsalted butter until the caramel is smooth.
  4. Reduce the heat to low. Arrange the apple slices on top of the caramel in an even layer. Carefully spoon the cake batter over the apples and smooth the top gently, taking care not to disturb the apples or caramel below.
  5. Transfer the pot or skillet to the oven and bake for about 30–35 minutes, or until the cake is cooked through and a toothpick inserted into the center comes out clean.
  6. Run a knife around the edges to loosen the cake from the pot. Allow the cake to cool for at least 10 minutes, then invert it onto a serving plate so the caramel and apples become the top. Serve warm, optionally with a scoop of vanilla ice cream.

Notes

  • If you prefer, you can cover the pot and finish cooking the cake on the stovetop over very low heat for about 30 minutes. Test doneness by inserting a toothpick into the center — if it comes out clean, the cake is done. If not, continue cooking and test again every few minutes.
